We made it muffins!! An entire month of posts dedicated to our most favorite restaurant recipes – whew! We’re impressed y’all stuck with it. Wait, we’re impressed that WE stuck with it. Let’s all give ourselves a pat on the back and have something delicious to eat.
Wait what?? You don’t have anything delicious to eat? Well A) that’s a horrible and terrible and you should ALWAYS have something delicious around to eat. And B) we can help. For the final restaurant recipe, the cherry on top of the month-o-recipes sundae, we…made…COOKIES!!!
Cookies?? Like, as in…a cookie?? Not a torte, a bombe, a croquembouche?? No cupcakes, we made cookies.
And not just cookies, but Gramercy Tavern cookies. Claudia Fleming cookies. Cookies unlike any cookies.

If you’ve never been to the culinary mecca that is Gramercy Tavern let us enlighten you. The food is sublime - divinely prepared dishes and totally amazing meals with the best dang waiters in New York City (and the martinis aren’t too shabby either). And then comes dessert. And THEN, then, after dessert, they give you dessert to go.
We KNOW! Now do you understand why we OBSESS over this place? Because they understand us. They understand that even though you probably stuffed yourself with their insanely good food and ridiculous desserts, you might just need a little something extra.Enter the cookies. Cashew chocolate chip crisps. A Claudia Fleming cookie masterpiece. The exact thing you want after a fancy schamncy meal. A good old chocolate chip cookie.
Except this is so much more. Milk and dark chocolate chunks, the faintest hint of orange and cashews. This is the upscale Gramercy Tavern version of a chocolate chip cookie. Sure there’s a little more work, some toasting and some chopping. But trust us loves. This cookie is the ultimate upscale chocolate chip cookie.

Cashew Chocolate Chip Crisps
Makes 36 cookies
Adapted from The Last Course: The Desserts of Gramercy Tavern
2 1/2 cups cashews, toasted
Preheat oven to 325. Line 2 baking sheets with parchment or silicone mats and set aside.
In a food processor, pulse 1/2 cup of the toasted cashews with 1 tablespoon of flour to a fine meal. In a medium bowl, combine remaining flour, salt and the ground cashew mixture. Coarsely chop the remaining cashews and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugars until creamy and light, about 3 minutes. Add vanilla and orange zest and mix until well combined. Add eggs one at a time, beating for a minute after each addition. Dissolve baking soda in water and add to bowl, beating to combine. In two batches, add in flour mixture, blending until just combined. Stir in chopped chocolate and cashews.
Drop heaping tablespoons of dough onto prepared baking sheets. Bake for about 18 minutes, rotating halfway, until cookies are golden all over. Cool on racks.
