As you prolly already know, we bakers like to adjust the recipes we use ever so slightly to make them our own. It's part flattery-for-the-recipes'-original-owner and part control-freak-we-can-totally-make-this-better-because-if-you-want-something-done-right-you-have-to-do-it-yourself. Er, or something.

Obviously, with baked goods there is a limit to how much you can actually change because there's that whole science of baking junk...like adding lots more baking powder to chocolate chip cookies would not be wise. 

You heard it hear first, muffins.

However, the beauty of our granola recipe is that you can completely customize it without worrying too much about it being too dense or too flat or too ugly. It's like the Starbucks of recipes and you know how much we like Starbucks.

We give you the basics and you can half-double-decaffeinated-half-caf-with-a-twist-of-lemon the thing until your heart's content. 

Um side note, extra blue-eyed bonus points for whomever can name that movie quote.

Don't like coconut? Don't add it. Prefer almonds? Use them instead. Think it needs more fiber? Add more wheat germ or switch it out for flax seeds. Have some leftover rice krispies to use up? Throw 'em in! All you have to do is add a bit more water to balance out the wet and dry ratio. 

Easy peasy.

And, we all want something easy peasy to make at 4am when we're watching Will & Kate!!!

Blue-Eyed Bakers' Granola
Makes a Whole Bunch

For the Dry Ingredients:
1 cup firmly packed brown sugar (light or dark is fine)
2 cups any kind of raw nut or mixture of nuts, roughly chopped
10 cups Quaker old-fashioned oats
1 cup-ish sweetened flaked coconut
½ cup wheat germ
½ teaspoon salt
1 ½ teaspoons ground cinnamon

For the Wet Ingredients:
¼ cup honey
1 ¼ cup vegetable oil
1 ½ teaspoon pure vanilla extract
¾ cup boiling water
2 cups dried fruit (one kind or more than one type)

Preheat oven to 225 degrees Fahrenheit.

Mix dry ingredients together in a large bowl, breaking up any clumps of coconut and brown sugar. Set aside.

Whisk the wet ingredients together well in a smaller bowl, adding the hot water last to melt some of the honey and oil together. Pour the wet ingredients over the dry oat mixture. Make sure it is well combined. 

Place the granola loosely into two shallow 12-x-17" baking sheets and bake for 1 to 1.5 hours in the oven. Turn the oven off and allow the granola on the pans to cool in the oven. Add the dried fruit and serve with yogurt, over ice cream or just with plain old milk.

Store in an airtight container at room temperature.

PS- We used walnuts for our nut and both apricots and cranberries because we totally didn't buy enough apricots. Whoops. But our fav fantastic combos are Almond-Cranberry, Pecan-Blueberry and Walnut-Apricot.
